Baked Sweet Potato Chips

I made these today and took them to a Super Bowl party. I think I was the biggest fan of them, but they are almost as good as those at Montana Brewing Co.

1 large sweet potato, peeled
2 tsp. vegetable oil
1/8 tsp table salt, or to taste

Preheat oven to 400 degrees. Spray 2 baking sheet with cooking spray. Thinly slice potatoes in a food processor or by hand; they should be no more than 1/8 inch thick. Arrange slices on baking sheets so they don't overlap. Brush with oil and sprinkle with salt. Bake chips until they begin to lightly brown. (I got this recipe on weightwatchers.com and the cooking time was supposed to be 15 min. But it took well over half an hour to cook and I turned them over halfway and added more salt.) If leftover chips become soggy, put them back in a hot oven for a few minutes to crisp them up.
